Fresh and dried ginger root is one of the most important spices in Ayurveda. It is said to support the metabolism in many ways and is used as a single spice or in Ayurvedic preparations.
The taste of dried ginger is spicy and the effect after digestion is sweet. It reduces Vata and Kapha, but does not increase Pitta when consumed in moderation.
