Fenugreek seeds (methika) have a bitter taste (rasa). Fenugreek is described in all Ayurvedic texts as a versatile plant and spice. According to Ayurvedic understanding, the brown seeds balance Vata and Kapha without stimulating Pitta.
In Ayurvedic cuisine, fenugreek seeds go well with curries (the bitter taste can be reduced by roasting the seeds in ghee).
