Ground nutmeg
The spice loses some of its aroma when heated, which is why it is usually only rubbed or sprinkled sparingly over the food shortly before serving. The flavors are highly fat-soluble, which is why they are intuitively used to round off dishes containing cheese (cheese puffs, fondue, raclette, etc.). It goes well with legumes, cabbage, potatoes, pastries.
